Spiced Zucchini Bread
1 cup zucchini, grated
4 large eggs
1 tsp vanilla extract
1 tsp butter extract
½ cup olive oil
3 tbsp cinnamon
3 tbsp ground clove
1 tsp ground ginger
½ tsp nutmeg
¾ cup coconut flour
1 cup almond flour, fine ground
1 tsp baking soda
1 tsp baking powder
¾ cup erythritol, powdered (Swerve brand confectioners)
Preheat oven to 350* and line a loaf pan with parchment paper, then spray with coconut spray.
In one bowl mix together all the wet ingredients...zucchini, eggs, vanilla and butter extract, and olive oil. Set aside.
In clean bowl sift together all dry ingredients..cinnamon, clove, ginger, nutmeg, coconut flour, almond flour, baking soda and powder, and powdered Erythritol.
Mix half the dry ingredients in with the wet mixture. Then add the second half and combine all together to form the batter. Pour batter into greased loaf pan.
Bake at 350* for 40-45 minutes or until a testing stick comes out clean. Let cool on the counter. Store in an air-tight container or plastic zip bag.
Enjoy a slice cold, smear with your favorite nut butter, or toast a slice and slather with salted butter!
