Chocolate Macadamia Coconut Clusters
1 bag of Lily's Chocolate Chips - Stevia sweetened
1 tsp Olive Oil
2 cups salted Macadamia Nut pieces (not chopped)
1/2 cup unsweetened coconut flakes (optional)
Pour bag of chips into microwave safe bowl and toss with olive oil. Microwave in 30 second increments (stirring in between each session) until melted and drizzles thinly off the spoon. Pour in macadamia nut pieces (not chopped and not whole) into the chocolate and fully coat the nuts.
In a 12 muffin cup tin lined with paper muffin cups place one tablespoon coconut flakes in each cup if you chose to use the coconut flakes. On top of the flakes spoon in equal amount of chocolate covered nuts into each cup.
Place in freezer for at least 1 hour. Once all are frozen you can transfer to a ziploc bag and keep in freezer for an easy and delightful Keto Friendly dessert.
This dessert really hits the spot on chocolate cravings in a keto friendly way.
