2 Tbsp Cream Cheese
1 3/4 Cup Shredded Mozzarella Cheese
3/4 Cup Almond Flour
1 Egg
Pinch of Salt
1 Tbsp Fresh Rosemary, chopped (optional)
Toppings
1/2-3/4 Cup Rao's Marinara Sauce (or sauce of your choice)
1 Cup Shredded Mozzarella Cheese (Cheddar/Jack mix is good, too)
Your topping choices...Pepperoni, onions, mushrooms, black olives, bell peppers, etc.
2 sheets of parchment paper
Special items may be needed by not necessary....pizza stone and rolling pin.
Preheat oven to 425* with pizza stone in oven (pizza stone is not necessary, but sure is awesome)...cookie sheet will work just fine.
In microwave safe bowl place 1 3/4 cup mozzarella cheese, cream cheese and almond flour. Microwave for 1 minute on high. Take out and stir. Put back in microwave for 30 seconds, then stir again. Depending on your microwave you will may need an additional 30-60 seconds until all melted and combined. Take out of microwave and stir in egg, salt and rosemary(optional) until it forms into a sticky ball of dough.
Place a sheet of parchment paper on counter, place ball of dough in middle of bottom parchment paper. Place second sheet of parchment paper on top. Flatten down with your palm, then with a rolling pin (or something heavy and round) roll out dough into a pizza round in between the two sheets of parchment paper. When you have your desired thickness and shape peel off the top sheet of parchment paper.
I do the next step one of two ways and both are great...
1st way is to just add the sauce and toppings then cook for 10-12 minutes directly on the parchment paper on the pizza stone. Remove from oven and enjoy.
2nd way is to pre-cook the pizza round for 5-7 minutes on the parchment paper on the pizza stone, then carefully and skillfully using spatula and flat cook sheet to flip the dough over for another 5 minutes to brown both sides. Then remove from oven, add sauce and toppings, then put back in oven for about 10 minutes.
Remove from oven and serve immediately. Left overs are really good,too!
